Dulu masa sekolah, kami duduk di kuaters RISDA merasa la makan laddu jiran bagi sempena hari Deepavali. Rasanya manis dan berlemak. Bentuknya bulat2 besar. Ada jugak yang kecil tapi selalunya makan tak habis pun sebiji tu.Hahahah.
Ada banyak resepi Laddu. Ada yang dibuat dari kacang-kacng, kismis, buah-buahan kering , coklat, susu dan macam-macam lagi la.

Murmura Laddu Recipe

Ingredients
1 cup Sesame seeds Til/Tal1 teaspoon Ghee2/3 cup Jaggery Gud/Gur1/4 cup Crushed Peanuts Groundnut - Optional but enhances flavor
For Greasing
1/2 teaspoon GheeMethod for making Til Ke LadooInstructions
1. Roast the sesame seeds till they turn golden brown color and keep aside
2. Take a pan. Add ghee and then the jaggery
3. Saute it over a slow flame till it caramelises
4. This is seen by adding a drop in cold water, if it forms a hard ball it is perfectly done
5. Put off the gas and now add the roasted til and peanuts to the melted jaggery and mix thoroughly
6. Grease your palm with little ghee and shape the til mixture
7. Til ke ladoo are ready to serve
Motichoor Ke Ladoo RecipeINGREDIENTS
FOR BOONDI:
2 cup besan / gram flour
2 tbsp rava / semolina / suji, fine
¼ tsp saffron food colour
1½ cup water
oil for frying
FOR SUGAR SYRUP:
1 cup sugar
½ tsp saffron food colour
½ cup water
¼ tsp cardamom powder
½ tsp lemon juice
2 tbsp cashew / kaju, chopped
2 tbsp pistachios, chopped
INSTRUCTIONS
1. firstly, to the hot sugar syrup, add prepared boondi.
2. mix well and make sure to coat all the boondi with sugar syrup.
3. continue to cook for 2 -3 minutes or until sugar syrup thickens.
4. cover and keep aside for 10 minutes.
5. after 10 minutes, sugar syrup is absorbed completely by boondi.
5. add 2 tbsp cashew and 2 tbsp pistachios. mix well.
6. you can see the the mixture is dried and all the sugar syrup has absorbed.
7. prepare the ladoo taking a small amount of boondi. add milk if required, to make moist laddu.
8. finally, motichoor laddo is ready to be served or refrigerate for a week.
Ragi Ladoo Recipe
1. Heat 2 teaspoons ghee in a pan.
2. Add 1/8 cup chopped nuts and raisins.
3. Fry till golden. Set aside.
4. To the same ghee add ragi flour and start roasting.
5. Roast in medium flame for 12-14 minutes or until a nutty aroma wafts out. If you taste a bit, the flour should be crispy and non sticky.
Once done, switch off the flame
6. In the mean time powder 1/2 cup sugar
7. Now take roasted flour, powdered sugar and fried nuts in a wide bowl
8. Add 1/4 cup ghee. It will melt as the flour is hot. Mix well and the mixture should be a bit wet and greasy.
Your mixture for ragi ladoo is ready.
Apply some ghee in your palms and make ladoo.
Use a tablespoon to scoop out the mixture for uniform size.
Once done let it dry then store in airtight container and use as snacks
Besan Laddu
Take one cup of besan (Bengal gram flour) and roast it in half cup of ghee (clarified butter) until it becomes pale reddish brown in color and gives good aroma.
After cooling add to it 3/4 cup of powdered sugar and elaichi (cardamom) powder made with 4-6 cardamoms.
Make ladoos pressing with your palm firmly. If required add more melted ghee.
Ravva Laddu
Heat two table spoons of ghee in pan and add one cup upma rava(white semolina). Roast the rava until it gives good fried aroma.
Add 3/4 cup powdered sugar and half spoon cardamom powder to it. If edible camphor (called pacha karpooram in Telugu) is available at home add a pinch of that powder. Add 1/4 cup of cold milk to this mix.
Make ladoos pressing with your palm firmly. If required add more milk. You can optionally add cashew nuts and kismis fried in ghee to the laddus.
Ragi Laddu
Replace besan with finger millet (Ragulu in Telugu) powder at point #1
None of the above recipes require sugar syrup. But if you have time for making one string sugar syrup, there is this recipe for you.
Muree Laddu (Laddu with puffed rice)
In two cups of water melt one cup of jaggery powder. Keep stirring until there is one string consistency.
Add two cups of puffed rice (add more if there is still more syrup). After cooling make laddus.
Chacolate laddu
This is a fusion item. To one cup of powdered marie biscuit powder add half cup chocolate powder and half cup powdered sugar. Add milk slowly(quantity not specified) until it attains ‘roti atta’ consistency (you should be able to make laddus with it). For additional taste you can add half cup milk powder to the mix. In such case increase sugar quantity to 3/4 cup.
When you call all kids for a party this will be a hit.
Wheat flour laddu
Same as besan laddu. But you should fry the flour till it becomes reddish brown. Otherwise there will be raw taste of flour. Wheat flour can be replaced with any other millet flour.
Sunnundalu (Urad dal laddu)
Though this is not super quick recipe, you can prepare the powder well in advance, keep it the fridge and make laddus whenever you want.
Dry roast 2 cups of urad dal until urad dal turns brown. Powder it in a mixie. The powder should be a bit coarse, though not as coarse as semolina. Store this in the fridge in air tight container.
Whenever required, for one cup of flour, add 3/4 cup powdered sugar and 6–7 table spoons (more if required) of ghee. Optionally you can add cardamom powder.
Make laddus by pressing tightly with your palm.
